For chocolate cake
Butter, for greasing the pans
1 cup all-purpose flour, plus more for pans
1 cups sugar
1⁄4 cup + 2 T cups cocoa powder
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup buttermilk
1/4 cup vegetable oil
1 egg, at room temperature
1/2 teaspoon pure vanilla extract
1/2 cup freshly brewed hot coffee
Preheat the oven to 350 degrees F. Butter 9” x 4” loaf pan and dust with cocoa powder.
Whisk together the flour, sugar, cocoa, baking soda, baking powder, and salt in a large bowl.
In another bowl, combine the buttermilk, oil, eggs, and vanilla. Add buttermilk mixture to dry ingredients and stir just to combine. Pour the batter into prepared pan and bake for 35 to 40 minutes until a cake tester comes out clean. Let cool for 10 min, then turn out onto cooling rack or serving plate
4 graham crackers
1 quart vanilla ice cream, softened
1⁄4 cup marshmallow fluff
1 cup mini marshmallows
Trim off “dome” on top of chocolate cake, then cut cake in half using serrated knife or cake leveler. Line 9” x 4” loaf pan with foil, then place bottom layer of cake into pan. Scoop about 1 - 1 1⁄2 cups of vanilla ice cream on top, and use offset spatula to spread. Trim graham crackers with serrated knife to fit pan, then lay 4 graham crackers on top of ice cream. Top with additional 1 - 1⁄2 cups of ice cream and spread into even layer. Place final layer of cake on top, and freeze overnight.
Peel off foil and trim sides of cake with serrated knife. Spread marshmallow fluff on top of cake, then top with mini marshmallows. If desired, toast marshmallows with creme brulee torch and serve immediately.
